Barbecuing with wood or charcoal gives it a distinct type of cooking flavor. Grilling over direct heat, usually a hot fire over 500 degrees for a short period time. The choice and combination of woods burned result in different flavors worked into the meat. Woods commonly used for their flavor include mesquite, hickory, maple, cherry, pecan, apple and oak woods. Different types of wood burn at individual rates. The heat also varies by the amount of wood used and trying to control the rate of burn through venting. Wood and charcoal are sometimes used together to optimize flavor and burning. Cooking with charcoal, other than like cooking with propane gas, is a more manageable than cooking over a wood fire. Charcoal cooking does not match the rich flavor of cooking over hardwood, but is low cost, and easy to purchase in sizes for close proximity cooking in typical available home model grills.

Charcoal grilling begins with purchasing a bag of charcoal briquettes. An available alternative to charcoal briquettes is lump charcoal. Lump charcoal is made of wood that has been made into charcoal but unlike briquets it has not been shaped. Lumped charcoal is a popular form of charcoal and is preferred by many people who dislike artificial binders used to hold briquets in their regular found shape, and it also burns much hotter and responds to changes in airflow quicker. Many barbecue aficionados like charcoal over gas for the authentic flavor that the coals provide.
